A light and healthy twist on classic lasagna, using zucchini slices instead of pasta for a low-carb, nutritious meal.

Instructions
Preheat oven to 375°F (190°C). Slice zucchini thinly and set aside.
Cook ground beef with minced garlic and a pinch of sea salt until browned. Mix in marinara sauce.
In a bowl, combine ricotta cheese, beaten egg, and grated parmesan.
Layer zucchini slices, meat sauce, ricotta mixture, and shredded mozzarella in a baking dish. Repeat layers.
Bake for 30 minutes until bubbly and golden. Let rest for 10 minutes before serving.
Notes
For a lower sodium version, use reduced-sodium marinara and salt.
