A light and healthy twist on classic lasagna, using zucchini slices instead of pasta for a low-carb, nutritious meal.

Ingredients

Vegetables

  • 1 lb Zucchini (about 3 medium)
  • 3 tbsp Olive oil (divided into 2 tbsp and 1 tbsp)
  • Sea salt Sea salt
  • 4 cloves Garlic (minced)
  • 2 lb Ground beef
  • 2 cups Marinara sauce
  • 12 oz Ricotta cheese (full-fat)
  • 1/2 cup Grated parmesan cheese
  • 3 cups Mozzarella cheese (shredded)
  • 1 large Egg

Instructions 

  • Preheat oven to 375°F (190°C). Slice zucchini thinly and set aside.
  • Cook ground beef with minced garlic and a pinch of sea salt until browned. Mix in marinara sauce.
  • In a bowl, combine ricotta cheese, beaten egg, and grated parmesan.
  • Layer zucchini slices, meat sauce, ricotta mixture, and shredded mozzarella in a baking dish. Repeat layers.
  • Bake for 30 minutes until bubbly and golden. Let rest for 10 minutes before serving.

Notes

For a lower sodium version, use reduced-sodium marinara and salt.
