Ingredients

Protein

  • 4 pieces chicken thighs or breasts
  • 2 cups white rice
  • 2 cups chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 piece onion (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, chopped)

Instructions 

  • Preheat oven to 375°F (190°C). Sear chicken in olive oil until golden, then set aside.
  • Sauté onions and garlic in the same skillet until fragrant and translucent.
  • Add rice, lemon juice, lemon zest, chicken broth, salt, and pepper; stir to combine.
  • Place chicken on top of rice mixture, cover with foil, and bake for 35-40 minutes.
  • Uncover, sprinkle parsley, and bake for an additional 5 minutes. Rest before serving.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
