Instructions
Preheat oven to 375°F (190°C). Sear chicken in olive oil until golden, then set aside.
Sauté onions and garlic in the same skillet until fragrant and translucent.
Add rice, lemon juice, lemon zest, chicken broth, salt, and pepper; stir to combine.
Place chicken on top of rice mixture, cover with foil, and bake for 35-40 minutes.
Uncover, sprinkle parsley, and bake for an additional 5 minutes. Rest before serving.
