A fresh and flavorful salad featuring grilled lemon herb chicken, perfect for a light and healthy meal.

Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 unit lemon (Juice of 1 lemon)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Salad

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 unit cucumber, sliced
  • 1/4 red onion red onion, thinly sliced

Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Instructions 

  • Marinate the chicken: combine olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate chicken for at least 30 minutes.
  • Grill the chicken: preheat grill, cook chicken 6-7 minutes per side until fully cooked, then rest and slice.
  • Prepare the salad: combine greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  • Make the dressing: whisk olive oil, lemon juice, salt, and pepper in a small bowl.
  • Assemble the salad: top with sliced chicken, drizzle with dressing, and toss gently.

Notes

For extra flavor, marinate the chicken longer or add fresh herbs to the salad.
