A hearty and nutritious bowl combining roasted vegetables, flavorful falafel, and a creamy tahini dressing, perfect for winter.

Ingredients

Recipe Winter Kale Falafel

  • 6 pieces Small Carrots (sliced into rounds)
  • 1 tbsp Extra Virgin Olive Oil (for roasting)
  • 0.25 tsp Smoked Paprika
  • Pinch Salt and Pepper (to taste)
  • 1 cup Pearl Couscous
  • 0.5 small Red Beet (peeled and shredded)
  • 1 tbsp Extra Virgin Olive Oil (for dressing)
  • 0.25 tsp Salt (for dressing)
  • 0.25 tsp Pepper (for dressing)
  • 1/3 cup Tahini
  • 1 clove Garlic (minced)
  • 1/3 cup Parsley (chopped)
  • 1/3 cup Water (for dressing)

Instructions 

  • Roast the sliced carrots with olive oil, smoked paprika, salt, and pepper until tender.
  • Cook the pearl couscous according to package instructions.
  • Prepare the tahini dressing by blending tahini, garlic, parsley, lemon juice, water, salt, and pepper until smooth.
  • Assemble the bowl with greens, roasted carrots, shredded beet, couscous, falafel, and seeds. Drizzle with tahini dressing and season with black pepper.
