For the Pizza Dough
0.75cupwarm water(105F to 115F)
1envelopeactive dry yeast(Red Star Yeast)
2cupsall-purpose flour
1tsp.granulated sugar
0.75tsp.salt
3TBSPolive oil
For the Watermelon Jam
2cupsWalla Walla Onions, diced
1tspOlive Oil
1.5cupswatermelon, seeded and diced
2TBSPApple Cider Vinegar
0.33cupBrown Sugar
0.25tspsalt

Instructions
Mix warm water and yeast; let sit 5 minutes.
Combine flour, sugar, salt, yeast mixture, and oil; knead until smooth and let rise 1 hour.
Saute onions, add watermelon, vinegar, sugar, cayenne, and salt; cook until thickened.
Pre-shape dough into 9-inch round, bake 5 minutes, then spread jam, add cheeses, and bake 10 more minutes.
Top with watermelon, arugula, and drizzle with balsamic glaze before serving.
