A vibrant and flavorful flatbread topped with homemade watermelon jam, feta, mozzarella, fresh watermelon, arugula, and a balsamic glaze for a perfect summer treat.

Ingredients

Pizza Dough

  • 1 batch pizza dough (recipe follows)
  • 1 cup feta cheese
  • 0.5 cup mozzarella cheese
  • 1 batch Watermelon Jam (recipe follows)
  • 1 cup diced watermelon
  • 3 TBSP balsamic glaze
  • a handful arugula

For the Pizza Dough

  • 0.75 cup warm water (105F to 115F)
  • 1 envelope active dry yeast (Red Star Yeast)
  • 2 cups all-purpose flour
  • 1 tsp. granulated sugar
  • 0.75 tsp. salt
  • 3 TBSP olive oil

For the Watermelon Jam

  • 2 cups Walla Walla Onions, diced
  • 1 tsp Olive Oil
  • 1.5 cups watermelon, seeded and diced
  • 2 TBSP Apple Cider Vinegar
  • 0.33 cup Brown Sugar
  • 0.25 tsp salt
  • Pinch cayenne

Instructions 

  • Mix warm water and yeast; let sit 5 minutes.
  • Combine flour, sugar, salt, yeast mixture, and oil; knead until smooth and let rise 1 hour.
  • Saute onions, add watermelon, vinegar, sugar, cayenne, and salt; cook until thickened.
  • Pre-shape dough into 9-inch round, bake 5 minutes, then spread jam, add cheeses, and bake 10 more minutes.
  • Top with watermelon, arugula, and drizzle with balsamic glaze before serving.

Notes

Watch the flatbread closely during baking to prevent burning due to sugar content.
