Instructions
Choose ripe fruit: look for a creamy yellow spot on the watermelon and a hollow sound when tapped. Chop into cubes. Rinse berries gently and pat dry.
Prepare the dressing: whisk lime juice, lime zest, honey, chopped mint, and a pinch of sea salt until well combined.
Combine the fruits in a large bowl. Pour dressing over and gently toss to coat without crushing berries.
Chill in the fridge for 10-15 minutes to meld flavors, or serve immediately.
