Delicious and dairy-free, these vegan strawberry ice cream bars are perfect for a refreshing treat. Made with fresh strawberries and coconut milk, they are easy to prepare and ideal for summer.

Ingredients

Fruits

  • 130 g fresh strawberries (washed, stems removed, quartered)
  • 30 g freeze-dried strawberry pieces or powder (optional)

Coconut Milk

  • 250 g chilled canned full-fat coconut milk (see notes)

Sweeteners

  • 60 ml pure maple syrup or agave
  • 1 teaspoon vanilla extract

Coconut Oil

  • 1 tablespoon solid coconut oil

Instructions 

  • Wash, stem, and quarter the strawberries. Place ice cream molds on a tray.
  • Add all ingredients to a blender and blend until smooth.
  • Transfer mixture to a piping bag or spoon into molds; insert sticks.
  • Freeze for 4-6 hours until set.
  • Remove from molds and garnish with freeze-dried strawberry pieces.

Notes

For best results, use fully chilled coconut milk and freeze the molds flat for easy removal.
