Delicious and dairy-free, these vegan strawberry ice cream bars are perfect for a refreshing treat. Made with fresh strawberries and coconut milk, they are easy to prepare and ideal for summer.
Ingredients

fresh strawberries
(washed, stems removed, quartered)

freeze-dried strawberry pieces or powder

Coconut Milk

chilled canned full-fat coconut milk
(see notes)
Sweeteners

pure maple syrup or agave

teaspoon
vanilla extract
Coconut Oil

solid coconut oil
Instructions
Wash, stem, and quarter the strawberries. Place ice cream molds on a tray.
Add all ingredients to a blender and blend until smooth.
Transfer mixture to a piping bag or spoon into molds; insert sticks.
Freeze for 4-6 hours until set.
Remove from molds and garnish with freeze-dried strawberry pieces.
Notes
For best results, use fully chilled coconut milk and freeze the molds flat for easy removal.
