A rich and flavorful vegan apple butter made from fresh apples and warm spices, perfect for spreading or topping.
Ingredients

apple cider vinegar

vanilla bean paste (or vanilla extract)

ground cinnamon

Instructions
Combine apples, apple juice, and vinegar in a large pot. Bring to a boil, then simmer for 30 minutes until apples soften.
Add sugar, vanilla, cinnamon, nutmeg, cloves, and salt. Mix well.
Blend the mixture until smooth using an immersion blender or transfer to a blender.
Return to the pot and cook uncovered over medium heat for 30-45 minutes, stirring frequently until thickened.
Serve warm or store in jars once cooled. Enjoy!
Notes
This apple butter can be stored in an airtight container in the refrigerator for up to two weeks.
