A delightful vanilla almond cake perfect for celebrations, layered with rich buttercream and optional toppings.

Ingredients

Cake Batter

  • 375 g all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 225 g unsalted butter, softened
  • 350 g granulated sugar
  • 4 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1.25 cups whole milk (room temperature)

Frosting

  • 450 g unsalted butter, softened
  • 720 g powdered sugar, sifted
  • 4.5 tablespoons milk
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon almond extract
  • pinch pinch salt

Optional toppings

  • sliced almonds optional sliced almonds lightly toasted
  • white chocolate shavings optional white chocolate shavings
  • fresh berries optional fresh berries

Instructions 

  • Preheat oven to 350°F (175°C). Grease and line cake pans.
  • Mix dry ingredients. Beat butter and sugar until fluffy. Add eggs, vanilla, and almond extracts. Alternate adding dry ingredients and milk. Divide batter and bake for 25-30 minutes.
  • Cool cakes completely. Prepare buttercream by beating butter, then gradually adding powdered sugar, vanilla, almond extracts, salt, and milk until smooth.
  • Assemble cake: place one layer, spread frosting, add second layer, and frost top and sides. Decorate as desired.

Notes

Ensure cakes are completely cooled before frosting to prevent melting.
