A flavorful and easy-to-make sandwich featuring turkey, sun-dried tomatoes, and fresh spinach on focaccia bread.

Ingredients

Dairy & Condiments

  • cup mayonnaise
  • ¼ cup oil-packed sun dried tomatoes (finely chopped)
  • ½ teaspoon paprika

Bread & Spreads

  • 1 9” x 6” focaccia bread (halved lengthwise)
  • 2 tablespoons basil pesto

Cheese & Meat

  • 6 deli-slices provolone cheese
  • 1 pound deli-sliced oven-roasted turkey

Vegetables

  • 2 jarred roasted red bell peppers sliced
  • 1 cup packed baby spinach
  • 1 teaspoon extra-virgin olive oil

Instructions 

  • Mix mayonnaise, sun-dried tomatoes, and paprika; refrigerate.
  • Spread mayonnaise on top half and pesto on bottom half of bread.
  • Add provolone, turkey, and peppers to the bottom half.
  • Toss spinach with olive oil and layer over peppers, then close sandwich.
  • Cut into quarters or eighths and serve.

Notes

For best flavor, refrigerate the assembled sandwich for 10 minutes before serving.
