  • 1 tablespoon olive oil
  • 1 diced onion
  • 1 diced red bell pepper
  • 1 diced green bell pepper
  • 1 pound ground turkey
  • 1 tablespoon chilli powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 0.25 teaspoon crushed chillies (optional)
  • 1 teaspoon salt
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded Havarti or Monterey Jack cheese
  • Cilantro chopped cilantro
  • Green onions chopped green onions
  • Avocado sliced avocado
  • Limes cut into wedges

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cook onion and bell peppers in olive oil for 3-4 minutes until tender.
  • Add ground turkey and cook for 5-6 minutes until browned.
  • Stir in spices, cook for 30 seconds, then add tomatoes, beans, and corn; cook 2-3 minutes.
  • Top with cheese, transfer to oven, and bake 5-10 minutes until melted and golden.
  • Serve topped with cilantro, green onions, avocado, and lime wedges.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days.
