Ingredients

Vegetables

  • 4 large bell peppers (any colour)
  • 2 tsp olive oil
  • 0.5 cup yellow onion, diced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 0.25 teaspoon red pepper flakes

Meat

  • 1 lb uncooked Canadian ground turkey

Vegetables

  • 2 zucchinis shredded zucchini (squeezed of excess water)
  • 15 oz low sodium Tomato sauce
  • 1 tbsp balsamic vinegar

Grains

  • 1.5 cups cooked brown rice

Cheese

  • 1 cup Mozzarella
  • 0.5 cup Parmesan

Herbs

  • to taste Fresh basil, for topping

Instructions 

  • Preheat grill and prepare bell peppers by cutting off tops and removing seeds.
  • Cook turkey with onion, Italian seasoning, garlic powder, red pepper flakes, and olive oil until browned.
  • Mix cooked turkey with shredded zucchini, tomato sauce, balsamic vinegar, cooked rice, and half of the cheese.
  • Stuff the peppers with the turkey mixture and top with remaining cheese.
  • Grill the stuffed peppers until peppers are tender and cheese is melted, about 10-15 minutes.

Notes

For extra flavor, garnish with fresh basil before serving.
