A delicious and healthy appetizer or main dish featuring tender peppers filled with a flavorful tuna mixture, topped with melted cheese.
Ingredients
Canned Tuna

7 oz. cans of tuna (flaked and drained)

red onion (minced)

sweet relish

mayonnaise
(traditional, olive oil, avocado, or light)

honey Dijon salad dressing

baby spinach (chopped)

shredded Mexican cheese blend
(or shredded sharp cheddar cheese)

sweet peppers (red, green, orange, yellow)
(seeded and cut in half)

(torn in half)
Instructions
Preheat oven to 375°F (190°C). Prepare a baking dish with foil or non-stick spray.
Mix tuna, red onion, relish, mayonnaise, and dressing until combined.
Fold in chopped spinach and cheese into the tuna mixture.
Fill each pepper half with about 1 cup of the mixture and top with cheese slices.
Bake for 30 minutes, then broil for 1-2 minutes until bubbly and golden.
Notes
For extra flavor, add herbs or spices of your choice.
