A vibrant and healthy tropical chia pudding served in refreshing fruit cups, perfect for a quick breakfast or snack.

Ingredients

Base mixture

  • 1.5 cups pineapple (fresh or defrosted from frozen)
  • 2 Tbsp honey
  • 1 cup coconut milk
  • 2 cups baby spinach
  • 1 small pinch salt
  • 5 Tbsp chia seeds
  • 1-2 cups mango (chopped)

Instructions 

  • Add all ingredients except chia seeds and mango to a blender and blend until smooth.
  • Pour the blended mixture into a jar with chia seeds, stir well, then refrigerate until thickened.
  • Layer the pudding with chopped mango and serve.

Notes

Use ripe mango for the best flavor and sweetness.
