A classic British dessert featuring a buttery pastry filled with golden syrup and a hint of lemon zest, perfect for any occasion.

Ingredients

Dough

  • 175 g Block Margarine or Butter
  • 65 g Caster Sugar (Superfine Sugar)

Filling

  • 250 g Plain Flour (All-purpose Flour)
  • 500 g Golden Syrup (see notes below)
  • 125 g Breadcumbs (fresh)
  • 1 piece Lemon (zested)
  • 3 tbsp Double Cream (Heavy Cream)
  • small pinch Sea Salt
  • 1 piece Free-range Egg (at room temperature)

Instructions 

  • Preheat oven to 180°C (350°F). Prepare the pastry by mixing margarine, flour, and sugar, then roll out and line a tart tin.
  • Mix golden syrup, lemon zest, breadcumbs, cream, salt, and beaten egg to make the filling.
  • Pour the filling into the prepared pastry case.
  • Bake for 30 minutes until golden and set.
  • Allow to cool slightly before serving.

Notes

Using fresh breadcumbs enhances the texture of the filling.
