A rich and comforting bread pudding featuring toasted coconut and pecans, perfect for a cozy dessert.

Ingredients

Dried ingredients

  • 1 cup dark brown sugar
  • 6 tbsp unsalted butter, melted
  • 2 tsp cinnamon
  • Pinch salt (to taste)
  • 1 cup pecan halves
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 1 1/2 tbsp butter
  • 1/4 cup granulated sugar
  • 3 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 4 eggs eggs, at room temp
  • 12 slices brioche bread or rolls (preferably dried out overnight)

Instructions 

  • Preheat oven to 350°F (175°C). Toast pecans and coconut on a baking sheet until golden, about 5-10 minutes.
  • Mix toasted pecans, coconut, brown sugar, melted butter, salt, and cinnamon. Press half into a prepared pan.
  • Cube bread, prepare custard with milk, cream, sugar, vanilla, and eggs. Layer bread and topping in the pan, then pour custard over.
  • Bake at 350°F (175°C) for 35-40 minutes until golden and set. Invert onto a plate and serve warm.

Notes

For best results, dry out the bread overnight and keep an eye on the toasting process to prevent burning.
