A delicious, no-bake snack combining toasted cashews, shredded coconut, and dates for a chewy, nutty treat.

Ingredients

Dried Fruits and Nuts

  • 0.75 cup raw cashews
  • 0.5 cup unsweetened shredded coconut
  • 2 cups pitted medjool dates
  • 1 tsp vanilla
  • 0.25 tsp sea salt
  • 0.25 cup smooth almond butter (natural variety)

Instructions 

  • Preheat oven to 350°F (175°C). Toast cashews for 5 minutes, then cool.
  • Place cashews, dates, coconut, and salt in a food processor; pulse until crumbly.
  • Add almond butter and vanilla; process until sticky.
  • Press mixture into a parchment-lined loaf pan; freeze for 15 minutes.
  • Slice into bars and serve.
