A flavorful and creamy dip inspired by classic tikka masala, perfect for sharing at gatherings.

16ouncescanned tomato sauce

2tspcoriander powder
1tspred chili powder
3/4cupscallions, chopped
1/2cupfresh cilantro, chopped
1cupfrozen fire-roasted corn, rinsed & drained
4ouncescream cheese, room temperature
1/4cupsour cream, room temperature
1/2cupwhole milk, room temperature
1/2tspgaram masala
1tbspdry fenugreek leaves (MDH kasoori methi)
2cupsmexican cheese, shredded(divided (1 cup for sauce, 1 cup on top))
Instructions
Grind cumin, cinnamon, cardamom, peppercorns, and cloves into a fine powder.
Heat oil and butter, sauté ginger and garlic, then add chilies, onions, and bell peppers. Cook until soft.
Add tomato sauce, tomato paste, spice blend, corn, cilantro, and scallions. Stir well and cook for 5 minutes.
Mix in cream cheese, sour cream, and milk. Add kasoori methi and garam masala. Stir until smooth, then add 1 cup cheese and remove from heat.
Transfer to a baking dish, top with remaining cheese, cover with foil, and bake at 400°F for 20 minutes. Uncover and bake 15 more minutes. Garnish with cilantro before serving.
Notes
Allow the dip to cool for 10 minutes before serving for the best texture.
