A flavorful and creamy dip inspired by classic tikka masala, perfect for sharing at gatherings.

Ingredients

Spice Blend

  • 1 tsp cumin seeds
  • 3 cloves cloves
  • 6 peppercorns peppercorns
  • 2 green cardamom pods green cardamom pods
  • 0.5 cinnamon stick cinnamon stick

Main Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 3 green chilies green chilies
  • 4 cloves garlic garlic, chopped
  • 1 inch piece ginger, chopped
  • 1 cup onion, chopped
  • 1 1/4 cup green bell pepper, chopped
  • 16 ounces canned tomato sauce
  • 1 tbsp tomato paste

Spice Blend Additions

  • 2 tsp coriander powder
  • 1 tsp red chili powder
  • 3/4 cup scallions, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 cup frozen fire-roasted corn, rinsed & drained
  • 4 ounces cream cheese, room temperature
  • 1/4 cup sour cream, room temperature
  • 1/2 cup whole milk, room temperature
  • 1/2 tsp garam masala
  • 1 tbsp dry fenugreek leaves (MDH kasoori methi)
  • 2 cups mexican cheese, shredded (divided (1 cup for sauce, 1 cup on top))

Instructions 

  • Grind cumin, cinnamon, cardamom, peppercorns, and cloves into a fine powder.
  • Heat oil and butter, sauté ginger and garlic, then add chilies, onions, and bell peppers. Cook until soft.
  • Add tomato sauce, tomato paste, spice blend, corn, cilantro, and scallions. Stir well and cook for 5 minutes.
  • Mix in cream cheese, sour cream, and milk. Add kasoori methi and garam masala. Stir until smooth, then add 1 cup cheese and remove from heat.
  • Transfer to a baking dish, top with remaining cheese, cover with foil, and bake at 400°F for 20 minutes. Uncover and bake 15 more minutes. Garnish with cilantro before serving.

Notes

Allow the dip to cool for 10 minutes before serving for the best texture.
