Ingredients

Rice and Broth

  • 1.5 cups long-grain white rice (rinsed and drained)
  • 3 cups chicken or seafood broth (warmed)

Butter

  • 1 tbsp unsalted butter (melted)
  • 7 tbsp unsalted butter (for topping)

Shrimp

  • 1 lb large raw shrimp (peeled and deveined)

Seasonings

  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil

Garlic and Herbs

  • 6 cloves fresh garlic (finely minced)
  • 0.25 cups fresh green parsley (finely chopped)
  • 0.5 tsp red pepper flakes

Instructions 

  • Preheat oven to 375°F (190°C). In a skillet, melt 1 tbsp butter and sauté garlic until fragrant.
  • In a baking dish, combine rice, broth, sautéed garlic, salt, pepper, and olive oil. Mix well.
  • Spread shrimp over the rice mixture, then dot with 7 tbsp butter and sprinkle parsley and red pepper flakes.
  • Bake uncovered for 25-30 minutes until rice is tender and shrimp are cooked through.
  • Remove from oven, garnish with additional parsley if desired, and serve hot.

Notes

For extra flavor, add a squeeze of lemon before serving.
