3/4cupunsweetened cocoa powder
2tspbaking soda

Wet Ingredients
2largeeggs, room temperature
1cupbuttermilk, room temperature
1cuphot coffee or hot water
1/2cupvegetable oil
1tbspvanilla extract
Frosting
16ozfull-fat cream cheese, softened
1 1/2cupspowdered sugar, sifted
2tspvanilla extract
1/4tspsalt
2 1/2cupsheavy whipping cream
1cupsemi-sweet or dark chocolate chips
1/2cupheavy whipping cream for ganache
2cupsCoco Pops or crispy rice cereal
1/2cupsemi-sweet chocolate chips, melted for crunch topping
2tbspunsalted butter, melted for crunch topping
Instructions
Preheat oven to 350°F (175°C). Grease and line two 8-inch pans.
Mix dry ingredients; in a separate bowl, combine wet ingredients. Combine both and add hot coffee, mixing until smooth. Divide batter and bake for 30-35 minutes.
Cool cakes, then beat cream cheese until smooth. Add powdered sugar, vanilla, salt; beat. Whip in heavy cream until stiff peaks form. Chill.
Make ganache by heating cream, pouring over chocolate chips, whisking until smooth. Cool slightly. Prepare crunch topping with cereal, melted chocolate, and butter; set aside.
Assemble cake: layer, soak with milk if desired, spread frosting, add second layer, frost outside, pour ganache, and top with crunch chunks.
Notes
For best results, chill the cake before serving to set the frosting and ganache.
