Instructions
Cook soba noodles according to package instructions, drain and rinse with cold water.
Mix cornstarch with water and combine with soy sauce, ginger, garlic, brown sugar, vinegar, and sesame oil to make teriyaki sauce.
Heat 1.5 tbsp oil in a skillet, cook shrimp until pink (2-3 min), then remove.
Stir-fry squash, carrot, celery, and edamame until carrots soften (~3 min), then add sauce and cook until slightly thickened.
Combine cooked noodles, bean sprouts, green onions, and shrimp with sauce; toss to coat and serve immediately.
Notes
Feel free to adjust seasoning to taste and serve hot for best flavor.
