Instructions
Cook soba noodles according to package instructions, drain, rinse with cold water, and set aside.
Mix cornstarch with cold water and combine with soy sauce, ginger, garlic, brown sugar, water, vinegar, and sesame oil to make teriyaki sauce.
Heat 1.5 tablespoons oil in a large skillet, cook shrimp until opaque (2-3 minutes), then remove.
Increase heat, stir-fry vegetables until carrots soften (about 3 minutes), then add teriyaki sauce and cook until slightly thickened.
Stir in cooked noodles, bean sprouts, green onions, and shrimp; toss to coat and serve immediately.
Notes
For extra flavor, garnish with sesame seeds or additional green onions.
