Ingredients

Dry ingredients

  • 2 cups whole wheat flour
  • 3/4 cup quick-cooking oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt

Wet ingredients

  • 6 tablespoons melted unsalted butter
  • 1/2 cup packed brown sugar
  • 2 eggs eggs
  • 2 teaspoons vanilla essence
  • 1/2 cup milk
  • 1 cup finely diced apple (approximately one small apple with skin)

Instructions 

  • Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Mix dry ingredients in a bowl: flour, oats, baking powder, baking soda, cinnamon, salt.
  • In a separate bowl, combine wet ingredients: melted butter, brown sugar, eggs, vanilla, milk, and diced apple.
  • Pour wet mixture into dry ingredients and stir until just combined.
  • Divide batter evenly into muffin cups and bake for 20 minutes or until golden brown.

Notes

For extra flavor, add a handful of chopped nuts or raisins.
