(can sub cheddar, Monterey Jack or a Mexican blend)

Instructions
Preheat oven to 375°F (190°C). Spray a 9x13-inch baking dish with cooking spray.
Cook beef and onion in a skillet for 7-8 minutes until browned; drain excess grease.
Add garlic and cook 30 seconds; stir in spices, rice, tomatoes, chilies, and broth. Mix well.
Pour mixture into dish, cover with foil, and bake 45-50 minutes until rice is tender.
Remove foil, sprinkle cheese, bake uncovered 8-10 minutes until melted. Let stand 5 minutes before serving.
Notes
You can customize spice level by adjusting chili powder.
