A flavorful baked casserole combining seasoned ground beef, rice, and cheese, topped with fresh toppings for a satisfying meal.

Ingredients

Meat and Vegetables

  • 1 pound lean ground beef (can sub ground chicken or turkey)
  • 1 yellow onion yellow onion, diced
  • 3 cloves garlic, minced (can sub 1 teaspoon garlic powder)
  • 1.5 tablespoons chili powder (see Note 1 for adjusting spice level)
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.25 cups uncooked long-grain white rice
  • 14.5 ounces canned diced tomatoes, undrained
  • 4 ounces can chopped green chilies
  • 3 cups beef broth (can sub chicken broth)
  • 2 cups shredded Colby Jack cheese (can sub cheddar, Monterey Jack or a Mexican blend)

Optional toppings

  • shredded lettuce
  • sour cream
  • avocado or guacamole
  • chopped fresh cilantro

Instructions 

  • Preheat oven to 375°F (190°C). Spray a 9x13-inch baking dish with cooking spray.
  • Cook beef and onion in a skillet for 7-8 minutes until browned; drain excess grease.
  • Add garlic and cook 30 seconds; stir in spices, rice, tomatoes, chilies, and broth. Mix well.
  • Pour mixture into dish, cover with foil, and bake 45-50 minutes until rice is tender.
  • Remove foil, sprinkle cheese, bake uncovered 8-10 minutes until melted. Let stand 5 minutes before serving.

Notes

You can customize spice level by adjusting chili powder.
