Ingredients

Rice and Water

  • 1 cup jasmine rice
  • 2 cups water

Chicken and Seasoning

  • 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
  • 1 tablespoon olive oil
  • salt salt (to taste)
  • pepper pepper (to taste)

Sauce and Vegetables

  • 3 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 cups broccoli florets
  • 1 red bell pepper sliced
  • 1 medium carrot (julienned)
  • 1 tablespoon sesame seeds
  • 2 green onions sliced

Instructions 

  • Rinse rice, then cook in water for 15 minutes until tender.
  • Mix honey, sriracha, soy sauce, rice vinegar, garlic, and ginger to make the sauce.
  • Cook chicken in olive oil until browned, then add sauce and cook until thickened.
  • Stir-fry vegetables in the same skillet, then combine with chicken.
  • Serve chicken and vegetables over rice, garnished with sesame seeds and green onions.

Notes

Adjust spice level with sriracha to taste.
