A moist and flavorful layered cake featuring sweet potatoes, perfect for fall celebrations or special occasions.

Ingredients

Cake Batter

  • 1 1/2 sticks unsalted butter, softened
  • 1 cup white sugar
  • 1 cup light brown sugar, firmly packed
  • 1/4 cup vegetable oil (canola oil recommended)
  • 3 eggs eggs, room temperature (place in warm water if in a hurry)
  • 15 oz sweet potatoes, pureed (can use fresh cooked sweet potato puree)
  • 1/2 cup milk
  • 1 tablespoon vanilla extract

Dry Ingredients

  • 3 cups cake flour (if not available, see note below)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Cream Cheese Frosting

  • 2 sticks unsalted butter, softened
  • 16 oz cream cheese, softened
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 6 cups powdered sugar
  • 1 teaspoon cinnamon

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour cake pans.
  • Mix dry ingredients; set aside.
  • Cream butter and sugars; add eggs, sweet potatoes, milk, and vanilla. Combine with dry ingredients.
  • Divide batter into pans; bake for 40-45 minutes. Cool completely.
  • Prepare frosting by beating cream cheese, butter, vanilla, salt, and powdered sugar until smooth.
  • Assemble cake layers and frost. Serve chilled.
