A quick and flavorful stir fry combining tender chicken with vibrant vegetables and a sweet chili sauce.

Ingredients

Protein

  • 1 pound boneless skinless chicken breasts

Oil

  • 0.25 cup avocado oil

Vegetables

  • 1 small small onion
  • 1 medium medium red bell pepper
  • 2 small small heads broccoli
  • 2 large large carrots
  • 4 cloves garlic
  • 3 small small zucchini
  • 1 tsp tapioca starch
  • 0.25 cup coconut aminos
  • 1 tbsp sambal oelek chili paste
  • 2-4 tbsp honey

Instructions 

  • Cut chicken into 1-inch cubes.
  • Heat avocado oil in a pan over medium heat.
  • Add onion and cook until softened, then add chicken and cook until browned.
  • Add bell pepper, broccoli, carrots, garlic, and zucchini; stir-fry until vegetables are tender.
  • Mix tapioca starch with water and add to thicken sauce, then stir in coconut aminos, chili paste, and honey; cook for 1 minute.

Notes

Use fresh vegetables for best flavor and texture.
