Ingredients

Flatbreads

  • 2 large large flatbreads
  • 2 cups fresh corn kernels (about 2-3 ears of corn)
  • 1 ripe ripe avocado (diced)
  • 1 cup cherry tomatoes (halved)
  • 0.25 cup red onion (finely chopped)
  • 0.25 cup fresh cilantro (chopped)
  • 2 tablespoons olive oil (divided for use)
  • 1 lime lime juice
  • to taste salt and pepper
  • optional feta cheese (for a tangy twist)

Instructions 

  • Preheat the grill and brush flatbreads with 1 tablespoon of olive oil.
  • Grill flatbreads until lightly charred, about 2-3 minutes per side.
  • In a bowl, combine corn, avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper.
  • Spread the mixture evenly over the grilled flatbreads, drizzle with remaining olive oil, and top with feta if desired.
  • Slice and serve immediately.
