  • 1 tablespoon avocado oil (or oil with a high smoke point)
  • 1 pound shrimp (peeled, deveined with tails off, thawed if frozen, chopped)
  • 1 teaspoon chipotle powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 8 soft corn shells corn shells
  • 2 cups finely shredded cabbage
  • 1 small avocado (sliced)

  • hot sauce hot sauce (for serving)

Instructions 

  • Preheat a sauté pan with avocado oil over medium-high heat.
  • Season chopped shrimp with chipotle, garlic, onion powder, and smoked paprika, then cook in hot oil for 4-6 minutes until opaque.
  • Warm the corn shells in the same pan, draining excess liquid.
  • Fill shells with cabbage, cooked shrimp, sliced avocado, and peach salsa. Serve with lime wedges and hot sauce.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce.
