Enjoy a fresh and flavorful summer meal with these peach and roast beef wraps, perfect for a light lunch or dinner.

Ingredients

Main Ingredients

  • 3 lb roast beef – I used a Top Round Roast Beef
  • 1 each avocado (sliced)
  • 1 cup feta cheese (sliced)
  • 2 peaches peach and tomato salad (sliced very thin)
  • 4 flatbreads flatbreads
  • 1 tbsp teriyaki sauce
  • 1 tbsp balsamic glaze or vinegar
  • 1 tsp salt
  • 1 tsp fresh ground black pepper
  • 1 tbsp honey
  • 2 peaches sliced very thin
  • 1 red onion sliced very thin
  • 4 cloves garlic – chopped
  • 1 jalapeno sliced thin
  • 1 handful fresh basil leaves chopped
  • 1 handful fresh oregano leaves chopped
  • 0.75 tsp red pepper flakes
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp balsamic glaze

Instructions 

  • Spread roast beef, sliced avocado, feta, and peach slices on flatbreads.
  • Mix olive oil, honey, balsamic glaze, teriyaki sauce, salt, pepper, red pepper flakes, garlic, jalapeno, basil, and oregano to make a dressing.
  • Drizzle dressing over the ingredients in each wrap.
  • Roll up the flatbreads tightly and serve immediately.

Notes

Use ripe peaches for the best flavor and adjust seasonings to taste.
