A delightful combination of creamy rice pudding with mixed berries, topped with crunchy granola—perfect for breakfast or dessert.

Ingredients

Dairy

  • 2 cups heavy cream
  • 1 cup milk

Dry Ingredients

  • 1 cup Minute® Instant White Rice
  • 1/3 cup mixed berry jam
  • 1 cup frozen mixed berries
  • 1/4 cup granulated sugar

Eggs

  • 4 egg yolks egg yolks
  • 1 tsp vanilla extract

Toppings

  • 1 cup granola

Instructions 

  • Combine cream, milk, and salt; bring to a boil. Stir in rice and jam.
  • Cook on medium-low, stirring until thickened. Add berries and sugar; boil briefly. Remove from heat.
  • Whisk egg yolks; gradually mix in hot rice. Return to heat and cook until thickened. Cool for 15 minutes.
  • Serve pudding topped with granola.

Notes

For a cold dessert, refrigerate for 1-2 hours before serving.
