A delicious and easy baked French toast with fresh berries, perfect for summer mornings or brunch.

Ingredients

Bread

  • 1 lb brioche or challah bread, cut into 1-inch cubes

Berries

  • 2 to 3 cups fresh mixed berries (blueberries, raspberries, strawberries)

Eggs

  • 6 large eggs, room temperature

Dairy

  • 1.5 cups whole milk
  • 0.5 cup heavy cream

Sugar

  • 0.25 cup granulated sugar

Flavorings

  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon

Maple syrup

  • for serving Maple syrup

Instructions 

  • Grease a 9x13 inch baking pan and layer half of the bread cubes.
  • Sprinkle half of the berries over the bread, then add remaining bread and berries.
  • Whisk eggs, milk, cream, sugar, vanilla, and cinnamon; pour over the layered bread and berries.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Preheat oven to 350°F (175°C) and bake for 45-55 minutes until golden and set. Rest for 10 minutes before serving with maple syrup.

Notes

Use fresh berries for the best flavor and serve with warm maple syrup.
