A fresh and vibrant pasta salad perfect for summer gatherings, combining creamy avocado, cherry tomatoes, and basil with a zesty lemon dressing.
Ingredients
Pasta and vegetables

rotini pasta or any short pasta

Instructions
Cook pasta in salted water, adding corn in last 3–4 minutes. Drain and cool.
Combine cherry tomatoes, spinach, diced avocado, and red onion in a large bowl.
Blend avocado, basil, olive oil, lemon juice, garlic, salt, and pepper until smooth.
Add pasta and corn to the bowl, pour dressing, and toss gently.
Garnish with basil and serve.
Notes
For extra flavor, add a sprinkle of grated Parmesan or a squeeze of additional lemon.
