A fresh and vibrant pasta salad perfect for summer gatherings, combining creamy avocado, cherry tomatoes, and basil with a zesty lemon dressing.

Ingredients

Pasta and vegetables

  • 8 ounces rotini pasta or any short pasta
  • 1 cup frozen corn
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • ½ avocado diced avocado
  • ¼ cup thinly sliced red onion
  • ½ avocado diced avocado (for dressing)
  • ½ cup fresh basil leaves, plus more for garnish
  • ¼ cup extra-virgin olive oil
  • 1 lemon juiced
  • 1 clove garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  • Cook pasta in salted water, adding corn in last 3–4 minutes. Drain and cool.
  • Combine cherry tomatoes, spinach, diced avocado, and red onion in a large bowl.
  • Blend avocado, basil, olive oil, lemon juice, garlic, salt, and pepper until smooth.
  • Add pasta and corn to the bowl, pour dressing, and toss gently.
  • Garnish with basil and serve.

Notes

For extra flavor, add a sprinkle of grated Parmesan or a squeeze of additional lemon.
