A delicious sugar-free dessert with a crunchy crust, creamy cheesecake layer, and rich chocolate pudding topping.

Ingredients

Crust

  • 1.5 cups almond flour
  • 3 tbsp cocoa powder
  • 1/4 cup sweetener
  • ¼ cup butter (melted)
  • 1 tbsp vanilla extract

Chocolate Pudding

  • 2 cups heavy cream
  • 1.5 tsp gelatin powder
  • 1/3 cup sweetener
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract

Cheesecake Layer

  • 8 oz cream cheese
  • 1/3 cup sweetener
  • 1 tsp vanilla extract
  • 1/2 cup heavy whipping cream

Whipped Cream Topping

  • 1 cup heavy cream
  • 3 tbsp sweetener
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 320F/160C and line a 9x9-inch pan with parchment.
  • Mix almond flour, sweetener, cocoa powder, and salt; add melted butter and vanilla. Press into pan and bake 15 minutes.
  • Prepare chocolate pudding by dissolving gelatin in 1/4 cup heavy cream; heat remaining cream with sweetener, cocoa, and salt. Combine with gelatin mixture and chill.
  • Mix cream cheese, sweetener, vanilla, and heavy cream for cheesecake; spread over crust. Chill.
  • Spread chocolate pudding over cheesecake; top with whipped cream. Refrigerate at least 1 hour before serving.
