2Tbsp.chopped fresh herbs (parsley, sage, thyme)
1/2tsp.poultry seasoning

8cupsdried bread cubes (1- to 1 1/2-inch cubes)
1cupshredded Gruyère cheese (4 oz.)
1/2cupgrated Parmesan cheese

Instructions
Preheat oven to 350°F (175°C). Melt butter in a skillet, cook celery, onion, and carrot until tender, then stir in herbs and seasonings.
Whisk together heavy cream and eggs. Mix in cooked vegetables, bread cubes, and cheeses. Spread in a greased baking dish, cover, and chill for at least 2 hours.
Let stand at room temperature for 20 minutes, then bake uncovered for 45 minutes until set. Garnish with shaved cheese and herbs if desired.
