Ingredients

  • 1/4 cup butter
  • 1 cup coarsely chopped celery
  • 1/2 cup coarsely chopped onion
  • 1/2 cup coarsely chopped carrot
  • 2 Tbsp. chopped fresh herbs (such as parsley, sage, thyme, and/or rosemary, plus more to garnish)
  • 1/2 tsp. poultry seasoning
  • 2 cups heavy cream
  • 4 eggs eggs
  • 8 cups dried bread cubes (1- to 1 1/2-inch cubes)
  • 4 oz. shredded Gruyère cheese (1 cup)
  • 1/2 cup grated Parmesan cheese

Optional Garnish

  • Shaved Gruyère or Parmesan cheese (optional)

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cook celery, onion, and carrot in butter until tender, then stir in herbs and seasonings.
  • Whisk heavy cream and eggs; combine with vegetable mixture, bread, and cheeses.
  • Spread in a greased dish, chill for at least 2 hours, then bake for 45 minutes until set.
  • Let stand 15 minutes, garnish with shaved cheese and herbs if desired, then serve.

Notes

For best flavor, prepare and chill the dish ahead of time.
