1cupcoarsely chopped celery
1/2cupcoarsely chopped onion
1/2cupcoarsely chopped carrot
2Tbsp.chopped fresh herbs (such as parsley, sage, thyme, and/or rosemary, plus more to garnish)
1/2tsp.poultry seasoning
2cupsheavy cream
4eggseggs
8cupsdried bread cubes (1- to 1 1/2-inch cubes)
4oz.shredded Gruyère cheese (1 cup)
1/2cupgrated Parmesan cheese

ShavedGruyère or Parmesan cheese(optional)
Instructions
Preheat oven to 350°F (175°C).
Cook celery, onion, and carrot in butter until tender, then stir in herbs and seasonings.
Whisk heavy cream and eggs; combine with vegetable mixture, bread, and cheeses.
Spread in a greased dish, chill for at least 2 hours, then bake for 45 minutes until set.
Let stand 15 minutes, garnish with shaved cheese and herbs if desired, then serve.
