Bell Peppers

Large bell peppers (mixed colours), tops sliced off, seeds and ribs removed
Shrimp

Shrimp, peeled and deveined
Vegetables and Seasonings

Instructions
Sauté onion, garlic, and celery in olive oil until transparent.
Add zucchini, eggplant, Cajun seasoning, salt, and pepper; cook until vegetables are tender.
Add shrimp and cook until pink.
Stuff each bell pepper with the mixture and place on a baking sheet.
Bake at 400°F (200°C) for 15 minutes. Garnish with parsley before serving.
