A flavorful low-carb dish featuring bell peppers stuffed with Cajun-seasoned shrimp and vegetables, baked to perfection.

Ingredients

Bell Peppers

  • 8 pieces Large bell peppers (mixed colours), tops sliced off, seeds and ribs removed

Shrimp

  • 1.5 pounds Shrimp, peeled and deveined

Vegetables and Seasonings

  • 3 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 diced Medium onion
  • 2 stalks Celery, finely chopped
  • 1 diced Medium zucchini
  • 1 cup Diced eggplant
  • 1 tablespoon Cajun seasoning
  • 1/4 cup Fresh parsley, chopped
  • to taste Salt
  • to taste Black pepper

Instructions 

  • Sauté onion, garlic, and celery in olive oil until transparent.
  • Add zucchini, eggplant, Cajun seasoning, salt, and pepper; cook until vegetables are tender.
  • Add shrimp and cook until pink.
  • Stuff each bell pepper with the mixture and place on a baking sheet.
  • Bake at 400°F (200°C) for 15 minutes. Garnish with parsley before serving.

Notes

Ensure not to overcook the vegetables for the best texture.
