Enjoy these delicious and easy-to-make strawberry oat bars, perfect for a quick breakfast or snack.

Ingredients

Dough and topping

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground ginger
  • Pinch salt
  • 8 tablespoons unsalted butter, melted
  • 2 cups strawberries, small-diced
  • 1 teaspoon cornstarch
  • 2 tablespoons lemon juice
  • 1 tablespoon granulated sugar

Instructions 

  • Mix oats, flour, sugar, ginger, and salt. Add melted butter and combine; reserve half for topping.
  • Press remaining mixture into an 8x8 inch pan. Optional: pre-bake at 350°F for 10-12 minutes.
  • Combine strawberries, cornstarch, lemon juice, and sugar. Mix gently.
  • Spread strawberry filling over the crust. Sprinkle reserved crumble on top.
  • Bake at 350°F for 30-35 minutes until golden. Cool for 2-3 hours before cutting.
