  • 2 pieces ripe bananas, mashed
  • 1 cup strawberries, chopped
  • 8 oz cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 6 tablespoons unsalted butter, softened (for cake)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ¾ cup granulated sugar or sugar substitute
  • ½ cup buttermilk
  • 1 ½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons vegetable oil
  • ½ cup frozen strawberry slices

Frosting

  • 8 oz cream cheese, softened
  • 4 tablespoons unsalted butter, room temperature
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup pureed strawberries
  • ½ cup freeze-dried strawberry slices

Instructions 

  • Preheat oven to 350°F (175°C), prepare cake pans.
  • Mix dry ingredients; beat butter and sugar, add bananas, eggs, vanilla.
  • Alternate adding dry ingredients and buttermilk; fold in strawberries and oil.
  • Divide batter into pans, bake 35-40 mins, cool completely.
  • Prepare frosting by mixing cream cheese, butter, sugar, vanilla, fold in strawberries.
  • Assemble cake, frost, decorate with strawberry slices, serve.

Notes

For best results, use fresh strawberries when possible and ensure cakes are fully cooled before frosting.
