A delicious and wholesome baked oatmeal featuring fresh strawberries, perfect for a nutritious breakfast or snack.

Ingredients

Dairy & Fats

  • 1 small knob butter (for greasing)
  • ¼ cup melted butter (make sure it’s not too hot)

Dry ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • ½ tsp ground cinnamon

Wet ingredients

  • 2 large eggs
  • ¼ cup maple syrup
  • 1 tbsp vanilla extract
  • ¼ tsp fine sea salt
  • 2 cups milk (almond or cashew)

Fruits & Toppings

  • 2 cups chopped fresh strawberries
  • 2-3 tbsp turbinado sugar (optional)

Instructions 

  • Preheat oven to 375F (190C). Grease a 12x8-inch dish with butter.
  • Mix oats, baking powder, and cinnamon. Whisk eggs, maple syrup, melted butter, vanilla, and salt. Add milk and combine.
  • Stir in dry ingredients and strawberries. Pour into dish and sprinkle with sugar.
  • Bake for 45-50 minutes until golden. Rest for 5-10 minutes before serving.
