A flavorful and nutritious toast topped with spiced chickpeas and creamy avocado, perfect for a quick breakfast or snack.

Ingredients

Oil

  • 1 tbsp olive oil

Canned Chickpeas

  • 400 g canned chickpeas (drained and rinsed)

Garlic

  • 1 clove garlic (crushed)

Spices

  • 0.5 tsp chilli powder (or to taste)
  • 0.5 tsp turmeric
  • 0.5 tsp cumin
  • 1 tsp paprika

Lemon Juice

  • 1 lemon juice of 1 lemon

Salt & Pepper

  • to taste Salt & pepper

Avocado

  • 1 avocado avocado

Chilli Flakes

  • a pinch Chilli flakes (optional)

Bread

  • 2 slices large slices of toasted sourdough (or bread of choice)

Instructions 

  • Heat oil in a pan over medium heat.
  • Add garlic and chickpeas; cook for 2 minutes, then add spices, lemon juice, salt, and pepper; cook for 2-3 more minutes.
  • Mash avocado with lemon juice and salt; add chili flakes if desired.
  • Spread avocado on toasted bread, top with chickpeas, and garnish with coriander.

Notes

Feel free to add extra chili flakes for more heat!
