1limejuice of 1 lime
Rice
1.5cupslong-grain white rice
2.25cupschicken broth
Beans
1can15 oz black beans, drained and rinsed
1can15 oz pinto beans, drained and rinsed
1tspground cumin
0.5tspchili powder
Tortillas
8largeburrito-size flour tortillas
2cupsMexican cheese blend, shredded
1cupsour cream
1avocadosliced
1cupsalsa(your favorite kind)
0.5cupred onion, diced
1jalapeñosliced (optional)

Instructions
Rinse rice until water runs clear, then combine with chicken broth. Bring to a boil, reduce heat, cover, and simmer for 18 minutes. Let sit for 5 minutes, then fluff and stir in butter, cilantro, lime juice, and salt.
Mix chicken strips with spices and marinate for at least 15 minutes.
Cook seasoned chicken in a skillet over medium-high heat until cooked through and slightly charred, about 5-7 minutes. Squeeze lime juice over hot chicken.
In the same skillet, heat beans with cumin, chili powder, and a splash of water for 3-4 minutes until heated and slightly mashed. Season with salt.
Warm tortillas in microwave or skillet. Assemble burritos by adding rice, chicken, beans, cheese, and toppings. Fold and roll tightly, wrap in foil if saving for later.
