A flavorful one-pan dish combining smoky chipotle, BBQ sauce, and tender chicken with rice, perfect for a quick and satisfying meal.

Ingredients

Protein

  • 1 lb diced chicken breast

Grains

  • 1 cup long-grain rice

Broth & Sauces

  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • 2 tbsp minced chipotle peppers in adobo
  • 1 tsp smoked paprika

Optional ingredients

  • corn (add during last 5 minutes)
  • black beans (add during last 5 minutes)
  • shredded cheddar cheese (sprinkle on top and melt)
  • chopped cilantro (for garnish)

Instructions 

  • Heat oil in a skillet, cook chicken until browned, 5-7 mins.
  • Add rice, broth, BBQ sauce, chipotle, paprika; bring to boil.
  • Reduce heat, cover, simmer 15-20 mins until rice is tender.
  • Stir in optional ingredients in last 5 mins.
  • Top with cheese, cover to melt, garnish with cilantro, serve warm.

Notes

For extra flavor, toast the rice before adding liquids.
