Instructions
Sear the chicken in a skillet with olive oil until lightly browned, then remove and set aside.
Sauté diced onion, then add garlic, chipotle, paprika, cumin, and oregano; cook until fragrant.
Add rice, broth, and BBQ sauce; stir and scrape browned bits from the pan.
Return chicken, add corn and beans, then simmer covered for 18-20 minutes until rice is tender.
Fluff rice, add lime juice if desired, garnish with cilantro or green onions, and serve hot.
Notes
For extra smoky flavor, toast the spices longer or add a dash of smoked paprika on top before serving.
