A flavorful one-pan dish combining smoky chipotle, tender chicken, and hearty rice for a quick and satisfying meal.

Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce finely chopped or 2 if spicy
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon dried oregano

  • 1 cup uncooked long-grain rice
  • 2 cups low-sodium chicken broth
  • 0.5 cup BBQ sauce (use your favorite brand)
  • 0.5 cup corn kernels (fresh, frozen, or canned)
  • 0.5 cup black beans (rinsed and drained)
  • 1 tablespoon lime juice (optional)

Garnish

  • to taste Fresh cilantro or green onions (for garnish)

Instructions 

  • Sear the chicken in a skillet with olive oil until lightly browned, then remove and set aside.
  • Sauté diced onion, then add garlic, chipotle, paprika, cumin, and oregano; cook until fragrant.
  • Add rice, broth, and BBQ sauce; stir and scrape browned bits from the pan.
  • Return chicken, add corn and beans, then simmer covered for 18-20 minutes until rice is tender.
  • Fluff rice, add lime juice if desired, garnish with cilantro or green onions, and serve hot.

Notes

For extra smoky flavor, toast the spices longer or add a dash of smoked paprika on top before serving.
