A hearty and flavorful slow cooker beef casserole perfect for a comforting meal. Tender beef combined with vegetables creates a satisfying dish.

Ingredients

Meat

  • 2 pounds beef chuck roast, cut into 1 and 1 half inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all purpose flour
  • 1 piece yellow onion, chopped
  • 3 sliced carrots
  • 3 stalks celery
  • 3 cloves minced garlic
  • 2 cups halved baby potatoes
  • 1 cup frozen peas
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce

Instructions 

  • Season beef with salt and pepper, then toss with flour.
  • Sear beef in olive oil until browned, then transfer to slow cooker.
  • Cook onion, carrots, and celery until softened, then add garlic briefly.
  • Transfer vegetables to slow cooker and add potatoes and peas. Mix broth, tomato paste, thyme, rosemary, and Worcestershire sauce and pour over.
  • Cover and cook on low for 7-8 hours or high for 4-5 hours. Check tenderness and thicken sauce if needed.
  • Taste, adjust seasoning, and serve hot.

Notes

For a thicker sauce, uncover and simmer for a few minutes at the end.
