A hearty and flavorful beef casserole perfect for summer evenings, slow-cooked to tender perfection with fresh vegetables and herbs.
Ingredients

braising beef chopped into chunks

plain (all-purpose) flour

garlic (peeled and minced)

Guinness or other ale

ml
beef stock

red bell pepper
chopped

green bell pepper
chopped

small courgette/zucchini
chopped into chunks

grated parmesan cheese
freshly chopped
parsley

red onion
peeled and thinly sliced
cooked couscous
for serving
(Optional flavored couscous like Ainsley Harriott's Spice Sensation)
Instructions
Preheat oven to 160°C/325°F (fan).
Brown beef in oil, then add garlic, cook 1 min, pour in Guinness and stock, bring to boil.
Cover and cook in oven for 3 hours, topping up with water if needed.
Add chopped peppers and zucchini, cook for 5 minutes to keep veg crunchy.
Sprinkle with parmesan, parsley, red onion, then serve with warm couscous.
Notes
For extra flavor, use flavored couscous or add fresh herbs.
