Instructions
Season the beef with salt and pepper, then sear in a hot skillet until browned.
Sauté onions, add garlic, then deglaze with balsamic vinegar.
Add broth, sugar, cranberries, thyme, and optional carrots. Cover and braise in oven at 325°F (163°C) for 3-3.5 hours.
Rest the beef, then skim fat and thicken sauce if needed. Slice and serve with the glaze.
