Ingredients

Fruits

  • 2 cups fresh blueberries
  • 1 freshly squeezed lemon lemon juice (juice only)
  • 1.25 cups granulated sugar (divided)

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 3 teaspoons vanilla extract
  • 1 cup buttermilk
  • 0.5 cup unsalted butter (melted)

Additional Blueberries

  • 1 cup blueberries
  • cup granulated sugar
  • 1 freshly squeezed lemon lemon juice (juice only)

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix 1 cup blueberries with ⅓ cup sugar and lemon juice; set aside.
  • Combine flour, baking powder, salt, and remaining 1 cup sugar in a bowl.
  • Stir in vanilla, buttermilk, and melted butter until just combined.
  • Pour batter into a skillet, top with the blueberry mixture, and bake for 30 minutes.

Notes

Serve warm with a scoop of vanilla ice cream for extra indulgence.
