A delicious and colorful dish combining tender shrimp, rice, and vegetables stuffed inside bell peppers, baked to perfection with melted cheese.

(Assorted colors, tops removed and seeds cleaned)

(Peeled, deveined, cut in half if large)

Instructions
Preheat oven to 350°F (175°C).
Cook rice according to package instructions.
Sauté chopped vegetables and shrimp in olive oil until tender and cooked through.
Mix cooked rice into the shrimp mixture, then stuff into prepared peppers.
Place peppers in a baking dish, cover with foil, and bake for 30 minutes. Uncover, add cheese, and bake 5-10 minutes until melted.
Notes
For extra flavor, add herbs or spices of your choice.
