A delicious and colorful dish combining tender shrimp, rice, and vegetables stuffed inside bell peppers, baked to perfection with melted cheese.

Ingredients

Vegetables

  • 4 pieces bell peppers (Assorted colors, tops removed and seeds cleaned)
  • 2 cups cooked rice
  • 3/4 pound shrimp (Peeled, deveined, cut in half if large)
  • 1/2 cup chopped white onions
  • 1 cup chopped mushrooms
  • 3/4 cup shredded Monterey Jack/Cheddar blend
  • 2 tablespoons olive oil

Instructions 

  • Preheat oven to 350°F (175°C).
  • Cook rice according to package instructions.
  • Sauté chopped vegetables and shrimp in olive oil until tender and cooked through.
  • Mix cooked rice into the shrimp mixture, then stuff into prepared peppers.
  • Place peppers in a baking dish, cover with foil, and bake for 30 minutes. Uncover, add cheese, and bake 5-10 minutes until melted.

Notes

For extra flavor, add herbs or spices of your choice.
