Ingredients

Protein

  • 1 pound large shrimp, peeled and deveined

Vegetables

  • 1 cup baby red potatoes, halved
  • 1 cup corn on the cob, cut into 2-inch rounds
  • 1/2 cup sliced onions (yellow or white)

Flavorings & Oils

  • 3 tablespoons olive oil or melted butter
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Seasonings

  • to taste Salt and black pepper
  • 1 tablespoon fresh parsley, chopped

Others

  • as needed Lemon wedges, for serving
  • 1 roll Aluminum foil

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cut a large piece of foil and lay on a baking sheet.
  • Mix shrimp, potatoes, corn, and onions in a bowl. Drizzle with oil and seasonings, toss to coat.
  • Transfer mixture to foil, fold to seal into a packet.
  • Bake for 20-25 minutes until shrimp is opaque and potatoes are tender. Garnish with parsley and serve with lemon wedges.
