A fresh and vibrant salad combining succulent shrimp, creamy avocados, and crisp vegetables, perfect for a light lunch or dinner.

Ingredients

Protein

  • 1 lb shrimp, peeled and deveined

Oil

  • 1 tablespoon olive oil

Seasonings

  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Vegetables

  • 2 medium avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber diced
  • ½ red onion thinly sliced

Greens

  • 2 cups mixed greens or arugula

Herbs and Citrus

  • 2 tablespoons fresh cilantro, chopped
  • 1 lime juiced

Dressing

  • 1 tablespoon olive oil for dressing
  • 1 teaspoon honey or agave syrup (optional)

Instructions 

  • Cook the shrimp in a skillet with olive oil, garlic powder, salt, and pepper until pink and cooked through, about 3-4 minutes per side.
  • In a large bowl, combine diced avocados, cherry tomatoes, cucumber, red onion, and greens.
  • Add cooked shrimp and chopped cilantro to the bowl.
  • In a small bowl, whisk together lime juice, olive oil, and honey (if using). Drizzle over the salad and toss gently.
  • Serve immediately garnished with additional cilantro if desired.

Notes

For extra flavor, marinate the shrimp in lime juice and spices before cooking.
